30 Days of Soup. Just another WordPress.com site. Day 0: Butternut Squash Soup. November 3, 2011. 25-3 lbs butternut squash. 1 medium yellow onion. 1 Tbs minced garlic. 8 cups chicken broth. 05 cup heavy cream. 05 tsp cayenne pepper. Salt and pepper to taste. 1) Preheat oven to 400 degrees. 2) Halve the squash, lightly brush insides with olive oil, then salt and pepper, put on a baking tray and roast for 30 mins until soft. 7) Bring back to a low simmer, add cayenne pepper, black pepper, and salt to taste.

Mom made the soup completely by herself, which was probably for the best; its always scary when our family fights in the kitchen-around the knives…. Anyways!
